Kishu, Japan is known for their Pickled Plum which is "Umeboshi" in Japanese. Typical "Umeboshi" are dried only once, however this "Umeboshi" is dried twice in order to enhance the flavor of the plum. "Umeboshi" is typically eaten with rice. This "Umeboshi" has less sodium which makes it healthier than a typical "Umeboshi."
